Rear seat backs in my '75 are wood.

I found some wood "side shields" under the vinyl on my factory Targa hard-top.

Other wood components I've noticed: dashboard trim on earlier cars, shift knobs and steering wheels on a few.

In the "German cardboard" realm, you've got the factory door cards, the interior rear panels, and the parcel shelf.

What do you know that you're not telling us?

My '70 has the original carpeting over the spare. There is a pocket for a 5" x 19" x 1/4" plywood (long since deteriorated beyond use) panel that sits over the charcoal canister/gap betreen the spare and charcoal canister. I believe the reproduction mats do not have this pocket.
