Help with tires for my car, need feedback

Hey fellow Porsche owners, I am in need of new tires as my tires have been on my car for about 10 years and need new ones cause of the age. I currently have Bridgestone's that came on the car when I bought it, so I know technology has changed and tires as well. I want to drive the car only in nice weather and maybe 1-2 events a year if that with these tires, I am planning on getting a full set of rims and tires for track use so its more a street driven car 90%. I am leaning towards Michelin's sport, hankock v12,goodyear g-force, yohahama and maybe back to Bridgestone re760 ..Please let me know what you guys think and my back tires are 285-30-18 could I go up to next size or just stay put for what the professional has done to set up my stance in a build shop just for Porsches.
