1980 911SC Weissach - Tires (March 2014)

I am looking at purchasing a Weissach and am trying to identify my tire options. I have searched this and other forums and have read about many tire suggestions.
One problem is many of the tires that have been suggested are no longer available.

I am going on the assumption that the car will have 7" and 8" by 15" wheels - front and rear respectively.

I searched TireRack for a 911SC (they don't a Weissach search option) and they suggested Pirelli P6000 - however, the largest size in P6000 is a 215 tire that supports a 6" to 7.5" wheel. I called Pirelli and they "cannot recommend" using the tire on an 8" wheel.

When I search TireRack for a larger rear tire 225/60 R15 (a tire that will "fit" an 8" wheel) I am presented with a few choices - the "best" choice seems to be a Kumho Ecsta LX Platinum - a tire and tire company I know nothing about.

So, that is the long story... the short question is... What are other folks doing for tires these days (March 2014)?
