... but what hi torque starter for a G50 is out there that the board truly feels is "plug and play" ? Just looking ahead if mine decides to crap out.

Don't remember the brand of my starter (very common brand that's pretty universal), but it never took a shim.

The one available on Ebay by Hi Performance of America is the one I've
had for 7-8yrs or so and it has been flawless. It did not need a shim on install. Does this one look like yours?

Hi Torque starter shim and clocking
 
I installed the IMI Hi-Torque starter a month ago. This shimming business I think mostly is misunderstood. The flange is thinner than the original starter, yes. You need a shim of material appx 1/8" to 3/16" thick once the starter is in position, over the stud, before the hollow allen recess nut is put on. This is to prevent the stud from projecting into the allen recess, limiting the bite your allen bit has.
I happened to make it out of 2 galv washers, and ground the edge down to clear the bump of the starter bolt.
Also: change out the electrical connector. I used a crimp female push-on with built in heat shrink- auto zone
