Question Clutch pedal travel

I have a 1978 911SC grey market bought in 1983 and I'm the second owner. I replaced my clutch, TO bearing, pressure plate, flywheel, helper spring, and cable and now I can't seem to get it adjusted correctly! The clutch won't come off the flywheel until the pedal is nearly to the floor. I've had several friends check it out but they couldn't fix it either. I've resorted to using a 5mm longer adjusting bolt to cause it to break over at about 80% thru the travel but I hate to jury-rig anything! My friends think they sold me the wrong pressure plate because I have replaced the clutch before and did not have this problem. I still feel it's more in getting it adjusted correctly. Am I wrong about it being in the adjustment? Any advice you could offer in reguard to correct adjusting technique would be appreciated.
