Hi Brian,

I too have been down this road. First, make absolutely sure those readings are accurate. The sender has to be matched to the proper gauge. Apparently there were different senders and gauges and they don't intermix. Try shooting an IR thermometer at the oil filter and see what you get when it's hot. It might be worth having the gauge restored by Hollywood speedo and getting a new correct sending unit and seeing what you get.

Also...and very important, are your ducts off the engine fan connected to your heat exchangers? If there is no air moving through your heat exchangers they basically become heat sinks and it just bakes the oil cooler just above the driver side H.E. And make sure all your engine sheet metal is present and installed correctly.

That will get you started....Lee
