No, your oil pressure sender has gone kaput. Replace it.

Does it act normal once running or stay pegged at 5 bar?
If so, the sender wires are setup backwards or you sender is bad https://www.clarks-garage.com/shop-manual/lube-03.htm

Don't know yet just put it all together and had replaced the sending unit with a new one Thought about the wires hooked up backwards, will look at that Don't want to start until this is fixed

My oil pressure "broke" right after I serviced the oil/cooler (new gaskets/o-rings).

Something is wrong in your wiring. IGN on should have 0 on the gauge.

Got a short somewhere then or faulty gauge or you messed up the wiring.
Measure voltage at the gauge cluster plug, and start tracing wires back. Wiring diagram from the FSM is here; http://p914-6info.net/944%20Manuals.html

Have you carefully cleaned the contacts to the pressure sender...and checked the continuity of the sender wires?
My thought is that a pegged indicator due to switched wiring would be the same as a pegged indicator from a lack of continuity - so the easiest thing to start with (if you have not already done this) would be to simply go back and "super-clean" the contacts at the sender...switch wires at the sender if you still get a pegged indicator - then work back from there. Another obvious question...has the indicator always pegged throughout your ownership of this car - or is this something recent...and has this happened without any other intervention on the part of yourself or someone else servicing the car? Later Edit: And while I realize that this may be preaching to the choir...do keep in mind that a good cleaning of all major electrical grounds, followed by an application of dielectric grease to protect them...can solve all kinds of electrical gremlins!
