With 1" or 1.25" spacers, either set will work on your early offset car.

Does the thickess (1", 1.5", 2", etc.) matter? Or as long as I use the early- to late-offset spacers I would be fine?
The reason I ask is because I might be able to get a pair of 2" spacers cheap. Would it be unwise to have, say, a pair of 2" spacers in the rear and 1" spacers in the front?

My 17 by 7.5 fit all around with now spacers, Now if I just got the right tire size I would be all set

I know the difference betweern early and late is just over an inch. There is plenty of room if the spacers are not exact, unless you're going to cram 285 wide tires. Two-inch spacers may be too much. You could buy the wheels you like, then get a tape measure out and see what spacers would fit.
