Could it be done?

I'm sure there are many people who can answer this but I've never seen it done....

Is it possible to run a 3.0L crank in an '89 engine with the '89 head, stock or possibly after market lightweight pistons with a higher CR, custom mapping and such and technically have a 3.0L motor with the look of a stock 2.5? Seems to make sense to me and I have most of the parts, anyone have any suggestions?

Yep, it makes it a 2.8 liter stroker.
Lindsey racing has the info on it on their website.
It requires machine work for it to fit and work properly, but doesnt make much more power if your only N/A. Not really worth it to most people due to the cost and low power output.

Isn't a 2.8 a 2.5 block with the 3.0 crank, and a 2.7 is a 3.0 block with a 2.5 crank, or something like that?
