Was leather standard on the 1989 944 Turbo?
???
Also, was there a set rule for interior/exterior color matchings? Was there a Black(ext) on Burgandy/Maroon(int) combo on the 1989 944 T?

No, the car could come without leather. And there was no "specific set standards" of what the car had to look like. A person could order what they wanted.
