I have a 1984 - 944. Will 15" phone dials off a 1987 944s fit ? Would I need spacers or anything like that or would they bolt right on?

Sorry, Porsche changed the offsets on the lineup in 87 to allow room for ABS. The 87 and up cars all have the same offset (52.3mm) and those 86 and earlier have about 23.3mm offsets. There's more info available

When I was shopping I looked at a 1984 944 with phone dials (still wondering if I should have got that one... shutup... no looking back!) but I don't know where they came from.

My car is an 85.5 that had 15" phonedials stock. I found some 86 951 16" fuchs for my car on ebay that look great. There are also 16" phonedials that will fit early cars but only the ones from the 86 951!!
