low oil level light is coming on

I am wrapping up my sons car which had coolant in the oil and vice versa. Did the oil cooler seals and everything seems good now in that the water and the oil are staying where they need to be. The issue that I am having is that the low oil light is coming on (87 turbo). The pressure is always good in that it will start at 5 and head down appropriately as the car warms up. I can start the car and let it idle for 1/2 hour and nothing happens. If I get in and drive it as soon as it hits 2000 rpm the low oil light will turn on. I have the car full of oil to the top mark and have checked it many times. The car did this before I started working on it and that is how I found the milkshake......

What are your thoughts on the cause?

Sounds like a fault in the instrument cluster or sensor.

Normally that light only goes on / off when you first start the car up, not while you are actually running / driving the car.

Check/Replace the oil level sensor on the left side of the oil pan. The "float" or arm may be bent, or the wiring intermittent.

You can try shorting the wire to ground and leaving it it off to check the instrument panel and oil light.

unless you've got a 951 with extra large or multiple oil coolers, 7 qts is too much !

it is just a stock 87 turbo with the external and the lines and cooler were completely dry as I had all taken apart to clean the milkshake out. I was just adding as the dang light kept coming on and I wanted to rule out actually not having enough oil in it.
