torque, rpm, what to aim for in an engine build?

I'm looking at doing the shunned gm v8 conversion in a 944. Every engine build I see is aimed at drag racing. I assume the optimal hp and torque curves are different. What should I be aiming for with a car that will see HPDE and autocross? Do I avoid a stroker? Do I want high rpm? More hp than torque?

I assume the stock engine puts out way too much low rpm torque for the suspension/tires to utilize so I would use bolt-on parts to shift the power band to higher rpm's

something with a flat torque curve from low RPMs until high up in the revs...you won't be going fast enough to need hi-rpm power.

for your purposes a motor making 350hp/350tq will be faster than a 400/300 motor, all else being equal.
