Get a voltage meter that plugs into the cigarette lighter plug to monitor running voltage. Maybe their is a correlation of the shut downs.

Also, think about getting the O2 sensor connected and doing a more comprehensive smoke test. You still could have unmetered air causing lean running and high temps....
