This happens to my 2.0 every now and then. Turns out the my throttle switch is worn and dirt gets in it. If I clean the tracks off with an eraser the hesitation will go away. One of these days...

When I drove from VA to upstate NY for the 2001 ECR I was getting 32 mpg on the highway. I've got stock FI with a crane electronic ignition.
30+ mpg is most definitly possible.

It does however sound like you might have a slight vacuum leak. I had small vacuum leak somewhere which was causing a 1300 idle....
