CIS removal before engine removal
Is it possible to remove the complete CIS fuel injection system from a 911SC before removing the engine if I lower the engine from the car, but before I slide it out from under the car? This would reduce the height that the rear of the body would need to be lifted. Potentially the cowls and fan/alternator could also be removed at this point?

Yes, But you are adding about 2-3 hours of work to the removal process. You will also have to re-install it the same way, adding another 2-3 hours to the install. Having removed the CIS intake from an engine both in the car and out of the car, I can say it is a royal pain while in the car, or leaning into the engine bay as I think you intend...
You would be better off finding a way to lift the car higher.

I dropped my engine today for the third time. In the garage, no lift, alone, everyone else in bed. I use judicious use of jackstands to angle the front and back or the car for the various parts of the process. When it comes time to pull the engine/tranny out from under while resting on a 3/4 inch thick old shelf (with a custom wood strip to support the midline and unweight the exchangers) on a ATV jack I put the front end on the tires and temporarily jack up the now very light back end with a jack from the side using a 4 ft 2x4 for support along the back edge of the floor pan. Don't block the front wheels and they will roll to move the small bit with the jack. Pull the powertrain out and then land it back down. For extra security, mount the rear wheels before bringing it up and you have an easy landing. Mine goes right back onto the torsion tube jackstands like a gymnast sticking a landing. Doing this gets the back end high enough to pull everything out with the CIS on. Taking the bumper and valence off isn't usually necessary if you have a high enough jack - but is a lot easier than messing with the CIS. If you need another 6 inches - add a 4x4 block between the jack pad and the 2x4 - at your own risk. That's why I ditched the little jack I had.
Another option I used when removing a VW engine is to have some frat brothers pick up the rear and walk it over. Dropped that engine in 31 min - start to finish!

CIS engine drop..........
I basically do the same as Notmytarga. I lift the body to a safe working height to get all the bits and pieces undone/removed. Next I support the engine on an ATV jack, remove the 4 motor mount bolts and let the engine down. Then, using 2 large floor jacks and a couple of 6 ton rated jack stands (they are taller than the lighter versions) I lift the rear of the car enough to pull the drivetrain out from under the chassis. As soon as the engine is out, I lower the chassis/body back down to a safer height. Using this method, I don't have to be under the car at any time while it is lifted the highest. Safety should always come first! Good luck with your project!
