oyster dressing
 
Gotta stop introducing people to this, means less left overs for me.

Pint of oysters fresh
1 stick butter
1 medium onion diced fine
(optional - celery, carrot, bell or other sweet pepper, maybe a little hot pepper, all chopped/diced small)
12 oz bottle "real" beer (No bud, nothing 'lite", etc. A real farkin' beer with some flavor in it. Newcastle is my fave for this but even Miller works)
1 cup super rich home made turkey stock
1 bag basic stuffing (not corn bread, but seasoned is OK if you like the flavors)
Garlic, salt, pepper to taste

Butter in a big pot over medium heat, add the onions, salt, pepper, garlic (and other veggies if you want 'em). While those start getting cooked (hint of color), drain the oysters and reserve the liquid. Use oyster juice, beer, and if needed the home made turkey stock (you'll need it for gravy too...) to get 2 cups liquid total. Once onions/veg are part cooked, getting soft, and showing some color, add the liquid. Bring to a boil, if very foamy (proteins from oysters) consider skimming it, then add the oysters themselves. Let them boil for a few minutes to cook through and then mix in the bag stuffing mix. If needed go a little more than 2 cups liquid total depending on how you like your dressing. If you get it too wet, simply chuck it in the oven for a while and dry it out some.

Oyster stuffing is definitely an acquired taste. My wife loves it - me - notsomuch.

I love it, but no one else in my house does so no go.

I also love oyster stew which is basically oysters, milk, and butter with a little salt and pepper. Toss in some oyster crackers and enjoy.

I've never had it. We always have bread/celery/onions/giblets/spices stuffing.

My uncle used to make that every Thanksgiving. I loved that stuff from a young age.
