Yup, the USDA prime NY cuts are great.
They stopped selling the whole tenderloin though. The side trimmings were the best beef you could buy from a grocery store. |
I hate buying my meat from big box stores. BJ's Sams Costco etc..
3X now I have cut open a package that was 2 days old only to find it was rancid inside. Same goes for Winn Dixie. I now buy from a local butcher or green market the day of or day before I am cooking. I also use Butcher Box for my proteins, I just stated with them a few months ago and I am VERY impressed with the quality and location. I am in Florida, all my meat is locally sourced. Super impressed. |
I think the feed lots that supply the high end steak houses are in the Midwest, like Kansas and so on. They have the highest concentration of high grade beef. If you can read the codes on the package, you can work out where the beef came from. Sometimes, you can find a cut that came from a Kansas feed lot cow that is USDA Prime.
The reason that Costco has prime beef is that it's a statistical eventuality. They just sell a metric ****ton of beef. |

That is the best part of the Ribeye...
Yum. We have a butchery program at work and the meat is of very good quality. I have been vacuum sealing ribeyes and storing them for summer. Amazing how good they keep when they are sealed and frozen. Price (for Canada) is great, too. |
Whatever you do, don’t cook it like the guy in the video. Cook it to 115, or 120, then let it rest. 115 would get my vote.

Agree Costco for Choice / Prime beef. In our area we are blessed with every supermarket name you can think of. All 25 mins or less from our door. Wegman's is the closest but get 2X + per pound for prime VS Costco. They do offer dry aged beef at even more premium ( which is worth it) as the other stores do not.
Believe it or not Wal-Mart sells choice beef at an unbeatable price but the selection is small, sometimes on the thin side at the locations near us. When shopping there and they have a decent NY strips - we'll buy a few extra and stock the freezer. |
We have a local store with a really tricky name. The meat store.
The have the prime steaks, and other sources of meat besides beef. |
