In-laws are coming for supper…
My in laws have a 24 hour layover on their flight to Paris. My wife is picking them up at the airport and I’m making supper.
I decided to go with bacon wrapped, cheese stuffed, maple smoked meatloaf. 2 lbs of ground beef from one of our steers, 2 cloves of garlic, 2 onions, steak spice, mozzarella and cheddar filling, and wrapped with local Hutterite bacon. Meatloaf is one of my fav foods. I'll try it next time. btw...it's nice to see someone else calling the meal 'supper' instead of 'dinner'. I was brought up with 'supper' and can't change. :) |

I know you guys are famous for bacon. But that looks like the most excellent bacon in a long time. Not too fatty, nicely browned (Milliard effect - spelling), and NOT dried out.

A layer or mix grated into the mix? |
Cheese layer… put 1/2 of your meat mixture into a crock pot. Press it in evenly. Then make a 1/4 or so inch divot in the center keeping about 1” away from the edge. Then put your cheese in the divot (slice to about 1/4” thick). Then put the rest of your meat mixture on top. Press down firmly. Then flip the crock pot over and roast. You could roast it in an oven in the crock pot too but that wasn’t part of my plans with the smoking.
