I am working on a cookbook called, "Everything Tastes Better in a Flour Tortilla" and I have a chapter on various mashed potato recipes.

Think mashed potato's and Mac and Cheese wrapped in a torpedo of taste.:cool:

Sandwiches, pizza, empanadas, pasties, patties, pies, tacos, burritos, etc.... Some sort of wrapper to get food to your mouth. I'd eat mashed potatoes or MnC out of a tortilla (crispy might be good for the MnC, but flacid would be good as well)

Think Thanksgiving leftovers: Mashed P's, stuffing, gravy, a little bit of dark turkey and a dollop of shredded cheese all snuggled up in a flour tortilla.

You need to add this for thanksgiving… seriously.

I make meat stuffing.
Rub 2 packages of Jimmy Dean into 3 bags of stuffing. Cook until 175.

Let cool and slice for sandwiches with turkey and cranberry.

It’s. So. Good….

Nice. I will start a thread in November for T-Day recipes. My wife and all the extended related Dames schuss me away from the kitchen...I need to turn that franchise around (thanks BB):cool:

I do pretty much all the cooking here.
My only other T day tip is to joint the turkey(s). We do 2 - one for sammiches the next day.

Use the back and wings for stock, cook legs and breast separately.
Breast is covered with bacon to baste. Cover with foil for all but the last 45.

Less than 4 hours in the oven and it’s all cooked properly vs the stuff and cook for 12 hour approach.

The taste sounds great. I would not want to be sitting across the table from you when you chomp down on it though.

OK, my wife divulged her secret recipe for the world's most desired mashed potatoes..

this if for a gathering:

5 pounds of chunked up peeled Yukon Gold potatoes boiled until fork soft. Drained and then mashed hot until in a uniform state. Add one stick (4 ounces) of butter (in small slices) and necessary warm milk (maybe a cup or more) continuing to use the mixer until the desired consistency is achieved. Salt and pepper to taste.

Secret ingredient is cream cheese, for this amount of potatoes maybe 5 to 6 ounces softened to blend into the mashed potatoes, again while using the mixer.

Remember, the butter and cream cheese have sodium in them already so be mindful with the salt.

You may wish to add a small amount of chives or parsley for interest. At this point the door is also open for garlic or cheese additions depending on taste.

My kids used to tease me about leftovers and flour tortillas…old bachelor habit. I didn't get married until I was 34. I told them it was research for the cookbook.

They still think I am an idiot!
