The Magic Orange

Great Chinese food has a very delicate flavor with a myriad of different flavors being blended. For years I have made good Chinese food, but it never quiet hit that plateau of delicacy...Well I finally made the grade last night...it had it all...hint of Orange, pungent garlic and the fire of Chili each indivdually and all melded together with crunchy Shrimp Stir Fry......

and here is how I did it...

Orange Shrimp

10.. 8/12 per pound shrimp peeled in ice water....save shells

2 1/2 cups water to boil Shrimp shells in

Cornstarch to coat Shrimp and set aside.

1 medium Carrot....use potatoe pealer to make thin Carrot slices

1 Broccolil Crown....U should have 8 or 10 small Florete (Steam in plastic bag in micro for a minute)

1 small Onion sliced and chopped, you want it coarse

4 oz Snow Peas washed

6 Dried Mushrooms...to reconsitute put them in with the Shrimp shells

OR YOU CAN BUY A BAG OF PRECUT STIR FRY VEGGIES....

When Shrimp shells turn pink....and Musrooms soft.....set Mushrooms aside with vegetables and discard Shrimp shells and strain shrimp stock...using most of the liquid to make Rice with....

About 1 Cup of Shrimp stock should be reserved....use about 1 tablespoon of the extra Cornstarch from coating shrimp.

1 Tablspoon of Sugar in with the Shrimp stock

1 Tablespoon of Soy Sauce in with the Shrimp Stock

1/4 of an inch of Peanut Oil in the Wok heated to almost Smoking

2 or 3 Cloves of Garlic diced and mashed

The Dried Skin of 1 or 2 Oranges....use your Potatoe pealer to peal the skin of an Orange, and let dry in the Kitchen,or place in low temp oven till dried out...

2 Dried Arobol Chili Pods

Place all these ingriedents in the Wok and fry till they are almost Brown ....take out and set aside..

Place the coated Shrimp in the heated Wok in a single layer and fry till pink....turning them as necesary...they should be slightly golden and with a nice crunchy crust..take out and set aside.

Reheat oil in Wok to almost smoking and put your Veggies in and fry till done....3 or 4 minutes

Replace Shrimp and Garlic/Chiili/ Orange Peal mixture in with the Vegies

Put reserved Shrimp stock in the wok to creat a medium thick gravey...if necessary to thin add a bit of water,

Serve Steaming hot with rice....

Ohhh..you get nice crunchy shrimp with a hint of Orange, pungent garlic and the hint of fire from the Chilis

It took almost as long to write the recipe as it took to cook....so you have a great meal in about 30 minutes...

Has the buffet trust fund fallen on hard times? ;)

After awhile all buffets begin to look the same...

You should open your own buffet Tabs. I already got a name for it: The Tabs Table...

pet peeve:

"of" does not belong after "myriad." Myriad is a synonym of "many", and is supposed to be used the same way. You wouldn't say "a many of", and likewise, you don't say "a myriad of."

Sorry to trot out the grammar police and I know that this is common usage, and has almost become "accepted", but it still bugs me...

Carry on.

So should it be "myriad flavours" (or I suppose myriad flavors)?

Tabs - great, now I'm hungry again.

Well whaddya know... I've been using it wrong as well. Never been corrected before. Thanks for the info.

tabby, I'm not even a shrimp fan and that sounds super!

philips' link shows it as correct. if we are using it as a noun?

tabs, my step dad makes that dish. and he is a pro chinese chef. nice job.

djmcmath 05-08-2005 06:00 PM

Clearly, tabs spelled it like an adjective, then used it like a noun. (nose in the air) Typical...

Tabs - you gonna cook me dinner when I hit Las Vegas next week?

I have a myriad of respect for any recipes posted here.

My wife can't boil water and after a long weeeknd of working on the car, I need to cook dinner if I want anything other than Domino's for dinner. Here's my favorite appetizer....

Spicy scallops with cementine dipping sauce
* 4 cups fresh-squeezed clementine juice, or orange juice
* 2 teaspoons ancho chile powder
* Finely grated zest and juice of 1 lime
* 6 tablespoons (3/4 stick) butter, cut into 8 pieces
* 1/2 cup extra-virgin olive oil
* 40 large sea scallops, patted dry
* Salt and freshly ground pepper

In a medium saucepan over high heat, bring clementine juice, chile powder, and lime zest and juice to a boil. Reduce heat and simmer 1 hour; mixture should be thickened and syrupy.

Remove from heat and whisk in butter, one piece at a time, until incorporated.

In a large skillet over a high flame, heat 2 tablespoons of olive oil until smoking. Season scallops with salt and pepper. Cook 10 scallops 1 to 2 minutes per side, until dark golden brown. Remove to paper towels and drain. Repeat with remaining oil and scallops in 3 batches. Serve scallops hot with warm sauce.

Hey Lube if you can stand a dirty house I will....

Irregardless Nostaus I will continue to make up the english language as I go...hehehehe

I am a devotee of the HBO series Deadwood, what I noticed is their attempt to use 19th Century American venicular...but everytime I see the program I the thought runs through my mind that they are copyiing Shakespear.

The Scallops sound GOOOOOD....the only thing I dislike is that Fresh Frozen Scallops loose flavor when frozen... and it is difficult to get fresh...

Historians figure the Deadwood linguistics to be pretty accurate. Great show. Amazing place, amazing time.

Back in the day, the one book everyone owned and most people read was the King James version of the Bible. That King James came a little bit after Shakespear's day, I think.

Modern media - movies, radio and now TV has killed off most of what was interesting about regional speech patterns and dialects..

I know the simplest and most delicious of all shrimp recipies. Easy as heck with only four ingredients (shrimp being one, and butter being another). It's one of the finest tastes I have ever had in my mouth, but I cannot share the recipe. I've been sworn to secrecy and it's killing me.

Did they really say f*ck so much in the old west? Methinks Deadwood is pandering a bit...

tabs 05-09-2005 10:19 AM

U mean like ""Fking Co[k sucker" ...."Half smart {unt"....the word Fk is olde English...and Victorian principles were more ideals of conduct than actually practiced... so I don't think they are going too overboard in their use of Language....Deadwood was the wild and wooly frontier full of ruffians and desperados...so the language would be coarser than a prim and proper drawing room in the east.. if U understand my meaning. if you would be so inclined to notice not all the characters in the teleplay use coarse language, it is a certainity that ones upbring would dictate whether or not one would be so incliuned as to use coarse language or not... .
