Watching American Iron Chef--
Sweetbreads? Sounds awful but I also eat red meat, etc. What does it taste like? Wiki was informative. Who's the judge in the middle?

You mean brain? It is actually quite good, unique taste. Sort of has the texture of Sea Urchin and a mild liver like flavor.

I made pig brain soup for my 2 boys a couple of weeks ago, they loved it. Simple prep too. Just boil some water with ginger and put the brain in there with a few drops of oil, bring to a boil and salt to taste. Just be sure to remove the membrane before cooking the brain.

they have a delicate but interesting chalky/waxy taste, but it's pleasant if that makes any sense. When I was cooking, we would poach them, then slice thinly (1/4 inch) dust with flower, sauté in clarified butter, throw in a few shrimp, toss, plate and finish with a lobster-sauterne cream sauce.

it was a beautiful plate.


what are they making? one of the rare times I miss TV.
