Chili dogs
 
I've never done chili dogs at home but we're having some folks over for the game and everyone wants dogs tonight.

It seems simple enough, but what dogs/chili/buns do you guys use? Any other favorite toppings tips?

Going for simple here.

If I could recreate the cheapo dog place dogs I'd be happy.

Don't skimp on the dogs.

Get Kosher, Hebrew National, all beef, no crap.

Nathans also has a Kosher line now.

Just like painting, start with a good base.

Here is a shot of the best around. Yesterdog in Grand Rapids, MI. It's the place in the American Pie movies (well the one the writer based Dog Years on anyway) and he was form here.

Yesterdog!

We hit them whenever we visit the family. Been going there for almost 30 years. A GR institution.

I've never been able to replicate one. I think duplicating the small but high quality frank is the problem. I don't think their kosher, and they've got very little snap but they're not filler-filled mush.

On the meat topping, plain bland old Hormel beanless seems to be close, but it is a little too chunky and orange. While I won't accuse Bill of pushing institutional slop, you could hit Gordon Foods for a #10 can of "chili". That might give you the right not-chile-but-"chili"-ish material to work with.

Chop your own dill relish from pickles.

Be sure to be annoyed if your guests don't follow the correct ordering routine and count up their bills in your head.

I know the guy that supplies the actual dogs and although it flies in the face of instinct they are actually the cheapest dogs allowable for sale as meat. I'm not kidding, many suppliers don't offer a dog on this low level.

I don't care myself but almost everyone assumes he uses high end dogs. The sales guy says he won't change ANYTHING about his ingredients either, it's the exact same as it's always been. Just a great combo in food and atmosphere.

yes ...kosher dogs, good buns, mustard onions, chili without beans, and sharp cheddar cheese. MMMMMMM.

If you want a remarkable dog, get the black angus beef hotdogs--although I eat hotdogs every weekend for lunch (dog, bun, yellow mustard, black pepper, celery seed, season salt) I can't really tell the difference between hebrew national, nathans, om, et al. But the angus dogs are fantastic. And for a while there (my palinism) Whole Foods had incredibly great buffalo dogs--but they've since turned real fatty and greasy. Might give them a try if you can find them though. Applebury Farms (sp) is also a good dog.

+1 Ballpark black angus beef hotdogs, Roman Meal buns, yellow mustard, lots of chopped white onion, pickle relish (sweet or dill per your taste) chili and grated sharp cheddar cheese.
Note: Campbell's Chunky Chili WITHOUT BEANS is really pretty good for chili dogs but is hard to find at times around here anyway.

Looks like Pinks is no longer in the old Aladden Hotel in Vegas. I was there and no one was aware of it.

Kowalskis 1/4 pounders....

Ground Beef Sauted
Chopped Onion Sauted with the GB
Coupla Cloves of Garlic crushed
Can of Tomatoe Puree
Cumin Powder
New Mexico Hot Chili Powder (no blend)
Cayenne Powder
Some Oregano flakes
Touch of Sugar
Touch of Corn Flour (type used for making Tortillias)
Little water

And the secret ingrident is...drum roll please.....A TOUCH OF CINAMON.

Take the whole mess after it is well cooked and place in a Food Processor and grind till it is the consistency of a thick lumpy sauce.

Place over those nice Kowalski Dogs on a nice Gourmet Bun...add Chopped onion, a bit of mustard and some cheese.......

anybody who knows beans about chili knows there are no beans in chili

some Texan said that, but I don't agree with it, don't care for cinnamon much in my chili either

You will definitely want shredded cheese too, perhaps chopped onions, depends on the audience
