Buffalo meat- it isn't worth it.
I bought buffalo tonight. Publix here in south Florida had it in a plastic package. Amy foods, of Houston, Texas produced this meat. 13 ounces/336 grams yielded 4 hamburgers. I grilled them the same way that I would grill any beef burger, with HIGH heat. They grilled up significantly longer than beef. After about 10 minutes, I was still staring at them...and I hadn't even flipped them over. Beef needs about 5 minutes at the grills' highest temperature per side. These needed more- WELL, at the 10 minute point I cut them with a Knife and saw that they were now pink in the middle. I procured plates, knifes, and spatulas....and put the buffalo burgers on the plate. They DO taste slightly different, but the difference in taste between beef and these is about 1/3 the difference in taste between lamb and beef. Lets have buffalo tonight! Sounds kind of strange~ The nutritional information on the package stated that the buffalo was way fattier than typical bovine. We typically don't eat cow anyway, since my family has a history of high cholesterol But we tried it anyway. I can make up for it with salmon this week anyway. EXPENSIVE! over $7 for 13 ounces of Buffalo, and this was at the local cheap grocer Publix. They have it at Whole Foods for far more than that, but we aren't interested. N! |
Sounds like you got crappy buffalo. My hometown has a buffalo farm, and they sell their meat in our IGA. it's slightly more expensive than beef, but has about 25% of the fat of ground beef. (Buffalo is similar to Emu in fat content)
http://www.healthybuffalo.com/nutrition.htm I've had best results with grilling over medium heat. Generally for a beef burger, or a steak, you sear at high heat, and then reduce heat for the maximum tenderness. Buffalo works best with medium heat. |
I'm pretty sure buffalo has less fat than beef. I tried it for the first time a couple of weeks ago (burgers). I liked it and wouldn't hesitate to buy it again. Don't remember a big difference in cooking times either.

I agree with Embraer. Considering the nutritional benefits I think it is worth it. A friend has a buffalo farm. We pay approx. $5/lb. and it's good eats :)

I agree that buffalo (bison) is pretty close to beef flavor-wise. I had it at Ted’s around Atlanta a couple of times. We went on a PCA run last summer to a bison farm. That was pretty cool. I was going to buy some steaks but his prices were pretty scary but he claims he sells out every season. More restaurant trade than consumers. I have yet to see it in a supermarket.
I’ve also had moose burgers & they were also very lean. Slightly gamey though. Now, if you ever see a caribou steak anywhere, buy it. That is really good meat. I've had bison filet mignon and it was one of the best steaks ever IMO. Jerky is good too.

supposed to be way less cholesterol in bison, grass fed instead of grain. also less fatty than beef. of course much of the flavor of meat comes from fat.

Great! I'm salivating. Love buffalo and caribou. I'm just too damned lazy to actually call a distributor and get some sent to me.

excellent for barbeque. leaner, probably less hormones and crap in the system. little flavorless. but a few spices fix that. |
I think grass fed beef is easier to come by and a bit cheaper.
As corn and soybeans are barely digestible for cows, it makes sense that cows eating what they have always eaten would be a good thing. |

Buffalo will have the same cholesterol content as any other meat. If it is grass fed and never "grained", it should be substantially lower in fat (especially saturated fat) than beef. Even grass fed beef will tend to have a higher fat content. On the other hand, if it is feedlot "grained" buffalo or it has been ground with fat waste, it may be every bit as fatty as traditional beef. As with all other fresh food items, it pays to know the source of the meat and how it has been raised and processed.

Buffalo burgers are tasty, but not worth the cost IMO.
For really yummy burgers I mix beef and lamb about 50-50. It helps that I have a great butcher who carries very good lamb. I've turned several people from lamb-haters into lamb-lovers when I tell them what they're eating :D |
