Migas!!!!
 
Driving into work today, I had a craving for Migas...low and behold, the café was offering a special on them!!! Yee Haw. For those who do not know:

My breakfast....complete with chorizo and jalapeños.

My buddy's dad owns a Mexican restaurant in Detroit. When we go hang out with him at his lake house once a year, he always makes migas for us every morning. Chirizzo makes it extra tasty. He taught me how to make it and my first attempt turned out tasty :)

My buddy's dad says migas is just something they whip up to get rid of stale or left over tortillas or chips.

No dinner - went directly to soccer to meet up with my lil one. When we came home she had a girl friend waiting and my son was swimming with his crimminals - I choose to keep an eye on them until they all took off - had a few beers in the hot tub...

huevos rancheros! migas got me thinking..i made these awhile back.

using Hatch, NM chilies. slow simmered, garden tomatoes...easy peasy. i make tons, freeze the extra for later.
