I'm soon headed for an early dinner at my favorite Sichuan place before I go see Jerry Seinfeld perform.

Found some fresh pacific smelt at the market. Dipped them in flour, salt and pepper and lightly fried them in olive oil. Then smothered them in lemon and served them with a very garlicky greek salad. Can you say "poli nostihmo"?

NICE!! dumb que..do you gut those smelt? or just eat them commando style? i see them in asian restaurants with heads and all.
