cooked dinner for mom's 74th ...
Told Mom to invite some friends over, her man flew down from up north, he offered to buy the fixins.
Noshes were cheese (cambozola and d'affinois) and a mix of stuffed green olives, some unstuffed green olives, some kalamata olives, and some artichoke hearts out of a jar. Grownups had Prosecco (eye-talian shampayne), I had sam smith's oatmeal stout. Salad was a Cesare with the dressing done from scratch (microplaned garlic, anchovy in a tube, ground mustard, olive oil, salt, black pepper, parm cheese, yolk of 2 coddled eggs, lots of fresh romaine), and croutons made by a local specialty bakery. For the main course I did salmon (kosher salt, black pepper, microplaned garlic, dill, super thin sliced sweet onions, 2 hrs @ 200f in a convection oven), finger potatoes (parboiled w/ garlic and onion, then finished in hot pan w/ olive oil and more garlic and onions), asparagus and green beans ( both were steamed w/ kosher salt and red pepper flakes, then drained and seared in a hot pan real quick). For the left hand I made breakfast style biscuits from scratch, used olive oil instead of crisco for the fat, added microplaned garlic, rosemary, and a few pinches of some other herbs to turn 'em into a fancy shmancy thing. Came out quite teh tasty...
