Fairly simple to make. Wash potato. Slice the potato into 1/8" slices. Place in plastic bag. Add a couple table spoons oil and a sprinkle of seasoning salt. Mix well. Then lay out on a cooking sheet. Cook at 425f for 25 to 30 minutes. While they are cooking, cook 1/8 lbs lean hamburger and 5 slices bacon cut into 1/4" to 1/2" pieces. Chop up a tomato and green onion. When the potato's are done put a layer down, sprinkle with cheese, then add a layer of hamburger/bacon then another layer of potato's, cheese , hamburger/bacon and so on. Place back in the over for about 5 minutes till the cheese is all melted. Sprinkle the top with the tomatoes and green onion. Add sour cream and serve. One large potato makes enough for two people. Enjoy :)

I make it almost every year for thanksgiving... sweet potato/pecan pie... Its a Paul Prudhommes recipe, so I thought it was more than appropriate to make it again in honor of his passing...

Its about 1.21 gigacalories a slice...

Red Onions thin
S&P.
Basil mmmmaximized.
Capers or Klamata olives to give it Mediterranean flavor.
Trader Joe's fete cheese(nice but a bit weak) or other.

Still eating on the turkey I smoked for turkey day. Brined it for 24 hours before so it was nice and moist. All the family raved about it. :D

How about some Turkey soup?
  • Chicken broth + turkey carcass in crock pot - leave on low overnight.
  • Dump into colander in the morning while capturing liquid....and remove bones.
  • Dump liquid back into crock pot along with turkey.
  • Add celery, onions, carrots, seasoning, and one more container of chicken broth and leave on low setting for a couple more hours.
  • Cook some egg noodles in separate pot until softened - do not cook all the way.
  • Dump noodles into crock pot, cook on low for 1/2 hour, and then turn off crock pot - it's soup time.

You are raising a couple cooks there John. Those dumpling are great. I have tried to make dumplings and mine always fall apart when cooked. This is even with my son's Chinese tutor showing me. Great job on both of their work.

This was the best Indian curry I have ever had and I've been to India three times. Recipe is from a friend who is from Mumbai. I don't know why Indian restaurants don't make this, the flavor is other-worldly. Perfect heat, hot but you get flavor. I found some cheap lamb at the market and after finding extremely lame recipes online, asked my friend for one. Next time I make this I will toast the dry whole spices and then grind into a paste, leave cinnamon whole, cut down on cloves a little I think. I got everything at a local Indian grocery store, best part was finding yogurt with cream on top again.

I marinated overnight and baked in the over for 3 hours at 325. Lamb was very tender. I liked the big chunks of meat and bone, lot of flavor there.

Cuban marinated pork shoulder for 20 hours. Toasted the cumin and black pepper, ground into a paste with the garlic, coated the shoulder for a few hours, then in a ziplock bag of lime and orange juice, zest from both and oregano. In the oven at 225-250F for 8 hours. Dirty rice, fried plaintains. The bark on the pork was fantastic.

We picked up a prime-rib at a farmers market west of here. Cooked low temp. on bbq.

I'll happily eat vegetables if they are cooked in Chinese food. Or, perhaps selected vegetables cooked like a Frenchie, or Eyetalian.

I make them tasty, but they are not so healthy when cooked...
