Dosa
Good morning all! Could someone who makes a good Masala Dosa at home please share a recipe, some tips, or maybe a good youtube video? Is the batter just really thin, or do you have to put it in some kind of a special press contraption to get it paper thin like in the restaurants?

My wife is from Northern India, but she does make some southern food, including dosa. I'll ask her a bit later today.

BTW, it is a thin batter made on a large pan, pretty much like a crepe. You can get dry batter mix at most Indian stores. Not sure on the potato mix, I'll have to have the wife chime in on that one......

It is just a very liquid (edit: low viscosity) dough. No flattening needed. I have seen them made several times at friend's homes.

My old man makes a good dosa. half rice and half soaked blue lentils run through the thermomix, then left overnight in a covered bowl. It comes out like textured engine oil. Fried in a searing hot pan, it's great with some honey and banana.
