Malt Vinegar
 
Malt Vinegar also called Alegar.......Wife and Daughter love this stuff on fish and I CAN'T stand it. I hate the smell of it and God forbid it ever hits my lips. Do I need help?

Nope. I don't even understand a sour taste added to perfectly good fish. I hate it too.

adding an acid to food really amps up the flavor..not just the sour flavor. but i dont understand the chemistry.

Malt vinegar sucks. White vinegar works on fish, french fries, pickles, de-scaling Rinnai heaters . . .

I'd tried it a few times due to the whole British fish and chips thing. I pretty much had the same experience as you up until last month at a restaurant in Florida. fish was very good on its own, but then I tried a bite of my mother's with the malt vinegar on it. It was good. Honestly, it was even better than it was without the vinegar. I don't know if it was because of the particular fish recipe or because of the particular recipe of the malt vinegar, but it was excellent.

I put it on fries all the time. Never actually on the fish, maybe I will try that next time.

its good on fish and fries...I also mix a cup of cider vinegar in a bottle water and drink it...

With fish & chips I'm guilty of pouring it on until the fish is soaking with it. Then I'll put tons of salt on it. I love the taste that way. I don't treat any other food in that manner. I also like a little malt vinegar on the fries.

I only like it on breaded fried fish. Same as lemon, I only use it on oily fish. The acid helps cut the oil in both cases. A good mild fish grilled or pan fried in olive oil doesn't need anything but maybe a little salt.
