Why you should let Garlic sit for 5-10 minutes

Who knew?

"The latest scientific research tells us that slicing, chopping, mincing or pressing garlic before cooking will enhance its health-promoting properties. A sulfur-based compound called alliin and an enzyme called alliinase are separated in the Garlic's cell structure when it is whole. Cutting garlic ruptures the cells and releases these elements, allowing them to come in contact and form a powerful new compound called alliicin, which not only adds to the number of garlic's health-promoting benefits but is also the culprit behind its pungent aroma and gives Garlic its "bite."

By chopping garlic more finely, more allicin may be produced. Pressing garlic or mincing it into a smooth paste will give you the strongest flavor and may also result in an increased amount of allicin.

So, the next time you chop, mince or press your garlic, you will know that the more pungent the smell, the better it probably is for your health.

Why you should let Garlic sit for 5-10 minutes

To get the most health benefits from garlic, let it sit for a minimum of 5 minutes, optimally 10 minutes, after cutting and before eating or cooking. Waiting 5-10 minutes allows the health-promoting alliicin to form. If you do not let it sit, alliicin is never formed, so it is worth the wait."

I'm melting some butter and will add crushed garlic and pepper to put over Angel Hair pasta...then adding shredded Romano cheese - better than Parmesan cheese - stronger flavor and soooooo good.
One of my fav. dishes.

But don't over do on the garlic in your diet.

We had a cute chick at work that got really into the garlic diet. The boss had to ask her to cut back on the garlic because she reeked of it. She tried to dose up with perfume but it just got intolerable.

An ex g/f was a personal trainer and a Jazzercise instructor...She got me into eating lots of garlic for the health benefit.
We'd work out together at the club.
I didn't mind if her garlic aroma kept the guys at a distance.

My garlic has been sitting for over a year, it's in that shaker bottle in the spice rack.

We used mix in few tablespoons of garlic powder for our horse with every feeding. Helped keep the flies away, and as a side benefit he smelled like an Italian kitchen instead of ... well ... horse.

Under what precise circumstances would you NOT let garlic sit for 5-10 minutes before eating it? Is there some sort of Garlic competition, maybe down on Coney Island, where this occurs?

Just came across that link while looking for a way to press tons of garlic in the shortest amount of time.
'Never knew about letting it sit...always pressed it into the pan.
But now I know better.

Speaking of garlic - anyone ever cook Elephant Garlic?
.
I lay it on its side and slice off the top - exposing as many of the clove tops as possible - set it back on its base, add a bit of salt/pepper and a dab of butter (maybe even some virgin oil).
Wrap it in tin foil and either on to the BBQ or in the oven.
So sweet - with a hint of garlic. Makes good garlic butter, too.
