trick is fresh yeast added to the water, and good proofing. ;)

I grew up working in bakery before high school. You cannot beat bread right from the oven that's still warm...

I use a bread machine, too. One I found at the local thrift shop, no instructions, don't even remember the brand. Makes a nice two pound loaf in about three hours, and I use honey as the sugar source, and I use flaxseed meal as one of the oil sources. Eric, I had to reopen this thread to say a big thanks. I've started using bush/manuka honey instead of sugar and the loaves are WAY better.
