more gas a good thing?

i have some mods on my car that increase airflow, k and n flat filter, msds headers, gutted cat, and i was wondering if i should crank the dme up to like 3 percent higher fuel to make sure i don't run lean. how else could i tell if i'm rich/lean? thanks.
