So why does the engine fan keep running even after the car is shut off? I'm pretty sure this is normal behavior but why is it necessary?

Fan switch in the radiator keeps the fans going until the rad temperature drops below the switch's setting...

If it stays on too long your battery will die..(fans run too long after shutdown to cool)..OR....your temp gauge stays higher than normal when driving.
Common fault -- switch contacts fail. I use a 75C thermofan switch with a stock 82C thermostat for AZ summer temps. John_AZ

My temp gauge was in the middle with 90 degree ambient temperature, today it was slightly left of center with 74 degree weather. The fan usually doesn't stay on for more than ten seconds.

I think it is to help minimise heat soak. I have a turbo and the water pump stays on after shut down to protect the turbo, but am pretty sure my fans stay on for a bit too
