New race car dash: material suggestions??

Hi there,

I'm restoring a tube-frame RSR clone race car. Completely re-doing the entire interior and installing a more appropriate dash:

Old dash, instruments:



New dash design, gauges (yes Speedo: want to street-legalize it)





The instrument panel and top sun shade will be 1/8" aluminum, but is there a newer, more common material to make the actual dash as I've constructed (to cover the front part of my Nascar-style cage) that's a low-flame/non-flammable composite material that might be easier to work with than sheet aluminum?
