If you have access to Durametric I think you can see what the temp sensor reading is. Might give some insight.

I had a very similar issue when I got my Boxster. Will it stay running if you give it gas after turning it over? Holding the pedal down partially?

On mine it ended up being the idle control valve...

The fuel pump and fuel sending unit are under the rear seat. They have eavh have a seal on top that is known to leak. I think volvo even has a recall for certain years. I would start there.
