Oil level in 924s is not stable

Tried to bleed air from the coolant on my 924S by loosening the 12 mm bolt just before the upper radiator hose....the head sheared (it was ready to go) and coolant everywhere.

My 924S and I are currently in Alicante, Spain, where the temp last week was 38C...bit cooler this week.
