2003 996 convertible
What are the recommended products for cleaning/conditioning leather seats and cleaning/conditioning factory convertible tops? Your help is appreciated in advance.

Any quality leather cleaner\convertible top - Lexol is good stuff.
Warm soapy water for sea tbelts - no cleaning agent is authorized for seat belts

I use Lexol on my leather. They sell it at the dealerships but I've been hooked on it for quite awhile now. No convertable top here so I can't help you out much with that. Sorry.

Lexol - is my choice for leather. One of the few that won't damage it and it is the right formulation for the kind of leather in your Porsche (it is correct for the tanning process used).
RaggTopp - is a good sealer for your convertible top. Ideally, most of the time, you just use water on your convertible top. Before RaggTopp, clean well with car soap (one of the clear {vs. cloudy}, simple detergents that does not have additives) and a soft brush (e.g., a horse hair brush from Eastwood). Too much brushing (too hard), and you will just raise a lot of fibers in the top material. So, lots of water and softly with the brush. Let dry; then use RaggTopp (sort of acts like the old ScotchGuard fabric protector).

Here's a link to all you wanted to know about cleaning a convertible top. I use the RAGG product line for keeping my top clean and in good condition. I think you can buy the stuff you need from Pelican.
