Single knock sensor bolted to the block works perfectly well. Jake Raby used to put a bracket on the bellhousing and mount there.
There's a tech note for knock sensors that says to avoiding mounting them high on the block - e.g. near the valve train. Exactly what the factory did with the 964 bridge(s).
