Does it have a front oil cooler? Typically, a 10 deg increase in ambient temp will increase oil temp by 20 deg (F). Without a front cooler, that's likely all she's got for cooling. The thermostat is probably wide open, using just the engine mounted cooler.
With that said, 210 isn't bad. It's hot enough to boil the water and nasty stuff out of the oil. It helps get rid of the mocha shake under the oil cap.
