I think you're going to massively undershoot your weight goal. My 85 coupe (The "Rot Rod") is 2335 pounds and it still has a sunroof and power windows.

It does have euro crush tubes, AC delete, light seats, RS carpet and a lot of "deletes". Including every single spare and/or unused wire, black box, switch, solenoid, button, etc. I removed 18 pounds of wiring and misc electrical bits and bobs no longer required. Including the brake pad wear indicators, the seat belt contacts, the buzzer, the FM antenna amp, all the mirror wiring, etc. and the power locks. Oh and a non-functioning factory alarm, cruise, AC, center console, the list went on and on.

These are simple cars and the wiring diagrams in the Bentley manual are surprisingly useful for chasing down unused wires.

I say all this because in this pic it looks like you've tied back a bunch of stuff that could be deleted...
