I still don't know just what products your using other than spray cans.
most all spray can products are lacking one thing called a catalyst aka hardener.
there are some spray cans that have a hardener making them a 2K product that right before you use them you mix the two together by pressing a plunger on the underside of the can then mixing them together by shaking the can.

if its just a single component product it will at times take a week or weeks to get to fully cured. it's often very difficult to sand a buff up a single component product until it has fully cured .
also if your spraying a enamel based product its almost impossible to get the same very high gloss or depth out of it.

you also may not be getting the gloss your looking for because of micro scratches left from your color sanding.
sanding with a 800 and then a 1500 is a very course sanding grit. sanding with a 2000 is far better. the 1500 if to fine of a grit to easily sand out a 800 grit scratches.
