Hey Brent - I am going through this exact same process. My wheels will be mainly street as I have a set of 8.5 x 11 17 inch Kinesis 3 piece wheels for the track. I am running 245/45 up front with no rubbing. The rears are huge - 315/35s and also do not rub but I needed to do a little massaging to get them to fit.
For the street I am thinking 8 x 11s with a 235/40 up front and a yet to be determined rear (285??). I see no reason to go to 9s for the front for street driving - this just increases steering effort and creates even more fitment issues. One thing you should note if Mike Lindsey hasn't already said this to you, is that he does not recommend the 2 piece Fuchs for track cars with over 300 HP.
So I am trying to decide between the 2 and 3 piece styles as it is possible I would run these on the track once in a while. Mirage International has a nice looking 3 piece wheel that is about the same price as the Lindsey Racing 2 piece wheels. Here is a picture of a Mirage 3 piece wheel -
