These early motors are not that difficult to wire up as they just did not have that much in the way of electrical things on them. There are quite a few wrecked cars around that have a good wiring harness in them and the harness is not that expensive.
Might be a lot of time and trouble ahead to just buy a used engine harness from a wrecked car. It plugs in the 14 pin connector on the bulkhead in the engine compartment and then covers everything on the engine. It would get rid of all the cobbled up mess you describe above.
You should have wiring in this harness for the generator, distributor, oil pressure and temp, one or two wires to the carbs (mine had a switch on the Zenith carbs) and believe that this is it.
