My 69 has a bit of a flare in the arches over your 66. I had 205/55 series on 6 inch rims. I went up to 7s and put 205/50 series with no problems. Just a little more gap in the wheel well. Yesterday I saw a 67 S with 7Rs, wheel spacers and 225/50 tires. Same kinda gap as my 69 and no rubbing which was surprising.

Tire size is mostly dependent with how you will be driving your car. If you plan on doing mostly Concours events, then only stock will do. If you're running back country roads all day, then you should get a lower profile tire. It won't fill the wheel wells like stock but performance rises drastically. If you drive on bad roads, then a higher sidewall will absorb some bumps. In Paul Frere's "911 Story", the skid pad testing done on stock early cars was around .78 Gs. By the mid 70's, our 911 was able to pull close to .89 Gs on wider tires and rims, so let that help your decision.

195s or 205s in a 55 or 60 series might be a good compromise
