I have run 205/60-15s on flat 6s on my '66, '67, and '68 SWB 911s for street use for years with no problems, other than a slight speedo error, and 205/50-15s on 7s for the track (requires fender lip rolling.)
The advantage to a 205/60-15 is that there are many more tires available in that size than the original size and it fills up the wheel well nicely, and the tall sidewall offers nice compliance on rough roads. A 205 is a little bit "baloon-y" on a 6, but they look fine to me.
