Also fun are the ATV tours of Valley of Fire. Not terribly expensive either.
Renting a Harley for a day and riding through Red Rock Canyon or to Lake Mead or ??? is about $150 IIRC. Jet ski or boat rental on Lake Mead is another option.
I'm not much of a gambler either, but spend way too much time in LV.
