Find out what normal operating temp is (maybe 240?) I don't know for sure. Let the car run until it's warmed up to 2 O'clock then check the temp in the exapnsion tank albeit carefully after it boils over insert a meat thermometer and read the coolant temp. If it's spec then you know its the gauge.

PS it could be the new sensor is bad. It's unlikely but not unheard of. Do you still have the old? Put it back in and see if the problem goes away.
