The only thing that would casue a consistently high reading sans electronics would be a partially clogged radiator or another restriction in the cooling system like an inverted thermostat. You said this all happened after you did the cooling overhaul. If you put the thermostat in backwards it would not open properly if at all. The element (spring side) should face inward.
