If you are using any other cars that you have seen as a reference point, make sure you know what their setup is.

On my 73 turbo flared wide body for instance I am running 275/40s on a custom built 17x10.5" rim with custom backspacing to get it to fill the flare without a spacer. It looks like a standard fuchs but it is not.

On the front I am running a 245/40 on a custom 17x9.

Once you find a tire you like, check out the manufacturers web site. They usually have a chart that shows min and max size rims for a given tire size.
